Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour If using self-rising flour, omit baking powder and salt.
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup milk Whole milk gives richer flavor; use non-dairy milk for a lighter option.
  • 1 large egg For egg-free, use a commercial egg replacer or 1/4 cup applesauce.
  • 1 teaspoon vanilla extract Use pure vanilla for best aroma.
Frying Ingredients
  • Oil for frying Use a neutral oil with a high smoke point.
  • Powdered sugar for dusting Dust while warm for best flavor.

Method
 

Preparation
  1. In a large bowl, whisk the flour, sugar, baking powder, and salt until evenly combined.
  2. In a separate bowl, beat the milk, egg, and vanilla until smooth.
  3. Pour the wet mixture into the dry mixture. Stir gently until a soft dough forms; avoid overmixing.
  4. Let the dough rest for 5-10 minutes to hydrate.
  5. Lightly flour a work surface and roll the dough to about 1/2-inch thickness.
  6. Cut the dough into squares or diamonds approximately 1½–2 inches across.
Cooking
  1. Heat oil in a deep fryer or heavy pan to 350°F (175°C).
  2. Fry a few pieces at a time, turning until puffed and golden, about 2-3 minutes per batch.
  3. Transfer beignets to paper towels to drain briefly.
  4. Dust generously with powdered sugar while still warm and serve.

Notes
