  • 2 lbs boneless, skinless chicken breasts Use similar sized pieces for even cooking.
  • 1/2 cup honey (or maple syrup) Can substitute with maple syrup.
  • 1/4 cup yellow mustard (or Dijon mustard) Dijon provides a more robust flavor.
  • 2 tbsp Worcestershire sauce (or soy sauce) Use soy sauce for a gluten-free option.
  • 1/4 cup salted butter, melted (or olive oil) Olive oil is a dairy-free alternative.
  • 2 cloves garlic, minced
  • 1 tsp dried oregano (or Italian seasoning) Feel free to use Italian seasoning.
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup heavy cream (or milk or dairy-free cream) Substitute with milk for a lighter sauce.

Method
 

Preparation
  1. Arrange the chicken breasts in an even layer in the bottom of the slow cooker, placing thicker pieces toward the outer edges.
  2. Melt the butter.
  3. In a medium bowl, whisk together melted butter, honey, mustard, Worcestershire sauce, minced garlic, oregano, salt, and pepper until smooth.
  4. Pour the sauce over the chicken, ensuring all pieces are coated.
Cooking
  1. Cover and cook on LOW for 6 hours until the chicken is cooked through.
  2. Stir in the heavy cream.
  3. Shred the chicken in the cooker and let sit for 5 minutes before serving.

Notes

For thicker sauce, remove a cup of sauce after cooking, whisk in a little cornstarch, then stir back in and cook on high for 15 minutes. Taste and adjust salt and pepper after adding cream.
