  • 4 large large potatoes, diced
  • 1 lb ground beef
  • 1 large onion, chopped
  • 3 cups beef broth
  • 1 cup cream or milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 tbsp butter

Method
 

Preparation
  1. In a skillet, brown the ground beef with chopped onion and garlic; drain excess fat.
  2. In the crockpot, combine the browned beef mixture, diced potatoes, beef broth, thyme, paprika, salt, and pepper.
Cooking
  1. Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
  2. Stir in the cream or milk and butter about 30 minutes before serving.
  3. Adjust seasoning to taste and enjoy your cozy soup!
