Yogurt Marinated Chicken

Ingredients
  

For the marinade
  • 1.5-2 lbs chicken cutlets You can also use thighs or drumsticks.
  • 1/2 cup plain full-fat Greek yogurt Can substitute with any plain yogurt.
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 whole lemon (juiced, about 1/4 cup) Freshly squeezed juice recommended.
  • 1 tsp lemon zest Zest of the lemon used.
  • 5 cloves garlic (minced)
  • 1 tbsp fresh parsley (chopped fine)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp cayenne pepper
  • 1/4 tsp coriander
  • 1/4 tsp cumin

Method
 

Preparation
  1. Combine the chicken marinade ingredients in a large bowl and whisk together.
  2. Add the chicken to the bowl and toss to coat evenly.
  3. Cover with plastic wrap and refrigerate for at least an hour or up to 24 hours.
  4. Allow the chicken to come to room temperature before cooking, about 20 minutes.
Cooking
  1. To pan fry, heat a skillet over medium heat with a little oil and cook the chicken for about 5-7 minutes on each side or until fully cooked.
  2. To air fry, preheat the air fryer to 375°F (190°C) and cook the chicken for about 10-15 minutes, turning halfway through.
  3. To bake, preheat the oven to 400°F (200°C), place the chicken on a baking sheet, and bake for 20-25 minutes, or until cooked through.

Notes
