  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Method
 

Preparation
  1. In a large pot, sauté onion and garlic until soft.
Cooking
  1. Add cooked chicken, white beans, corn, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper.
  2. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  3. Stir in heavy cream and heat through.
Serving
  1. Serve hot, garnished with chopped cilantro.
