Preparation
- Rinse the watermelon, cut it into even bite-sized cubes, and put them in a large mixing bowl.
- Thinly slice the red onion and add it to the bowl. Soak in cold water for 5–10 minutes for a milder taste if desired.
- Gently tear the mint leaves and sprinkle them over the watermelon and onion.
- Crumble the feta on top, distributing it across the salad.
- Drizzle lime juice and olive oil over the ingredients and season with sea salt and freshly ground black pepper.
- Gently toss the salad using a large spoon, taking care not to crush the watermelon or break the feta.
- Taste and adjust seasoning if needed.
- Serve immediately, or chill for 15–20 minutes for the flavors to meld.

Notes
For a dairy-free version, use firm vegan feta or skip cheese and add toasted nuts for texture. Best eaten fresh; not suitable for freezing.
