Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, espresso powder, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually mix the dry ingredients into the wet mixture until combined.
- Scoop the dough onto a lined baking tray, leaving space between each cookie.
- Bake for 10-12 minutes.
- Let the cookies cool on a wire rack.
Filling Preparation
- In a separate bowl, whip the mascarpone cheese, whipping cream, powdered sugar, and vanilla until smooth.
Assembly
- Once the cookies are cool, spread a layer of the mascarpone cream between two cookies to make sandwich cookies.
- Dust cocoa powder on top of the filled cookies.
