  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
Filling Ingredients
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually mix the dry ingredients into the wet mixture until combined.
  6. Scoop the dough onto a lined baking tray, leaving space between each cookie.
  7. Bake for 10-12 minutes.
  8. Let the cookies cool on a wire rack.
Filling Preparation
  1. In a separate bowl, whip the mascarpone cheese, whipping cream, powdered sugar, and vanilla until smooth.
Assembly
  1. Once the cookies are cool, spread a layer of the mascarpone cream between two cookies to make sandwich cookies.
  2. Dust cocoa powder on top of the filled cookies.
