Ingredients
  

For the rice
  • 1 cup uncooked white rice Rinsed under cold water
  • 2 cups water or chicken broth Chicken broth adds more flavor
For the meat mixture
  • 1 lb ground beef or turkey Choose according to preference
  • 1 packet taco seasoning Adjust seasoning to taste
  • 1 can (15 oz) black beans Drained and rinsed
  • 1 cup corn Can use frozen or canned corn
Toppings
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil For cooking the meat
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges For garnish

Method
 

Cooking the Rice
  1. Rinse the rice under cold water, then combine with water or chicken broth in a pot.
  2. Bring to a boil, reduce heat and cover.
  3. Simmer for 15-20 minutes until rice is cooked.
Cooking the Meat
  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground beef or turkey and cook until browned, breaking apart as it cooks.
  3. Drain excess fat and stir in taco seasoning and black beans, cooking together for another 2-3 minutes.
Assembling the Bowl
  1. In bowls, layer cooked rice, meat mixture, corn, and diced tomatoes.
  2. Top with shredded lettuce and cheddar cheese.
  3. Add salsa and optional garnishes like cilantro and lime wedges.
  4. Serve warm.

Notes
