Ingredients
  

Main Ingredients
  • 2 lbs chicken breast (boneless, skinless) Can substitute with chicken thighs for juicier meat.
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup teriyaki sauce Use low-sodium if desired.
  • 1/2 cup brown sugar (packed) For a lower-sugar version, reduce by 1/4 cup and add splash of pineapple juice.
  • 1 tablespoon soy sauce Use low-sodium if desired.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped For garnish.

Method
 

Preparation
  1. Place the chicken breasts in the bottom of your crock pot in a single layer.
  2. In a bowl, combine the pineapple chunks, teriyaki sauce, brown sugar, soy sauce, garlic powder, and black pepper. Stir until the sugar dissolves.
  3. Pour the sauce evenly over the chicken so every piece is coated.
Cooking
  1. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is very tender.
  2. Use two forks to shred the chicken directly in the pot.
  3. Stir the shredded meat into the sauce to soak up the flavors.
Serving
  1. Just before serving, sprinkle the chopped green onions over the chicken.

Notes
