  • 4 pieces boneless, skinless chicken breasts Can substitute with boneless skinless thighs.
  • 1 cup Sweet Baby Ray’s BBQ sauce Use your favorite variety.
  • 1/2 cup chicken broth Or low-sodium broth; water plus a pinch of bouillon can be used.
  • 1 tbsp garlic powder or 2 cloves fresh garlic, minced Fresh garlic gives brighter flavor.
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • to taste sliced green onions for garnish Optional.

Method
 

Preparation
  1. Place the chicken breasts in an even layer in the crockpot.
  2. In a medium bowl, whisk the BBQ sauce, chicken broth, garlic powder or minced garlic, onion powder, and a pinch of salt and pepper until smooth.
  3. Pour the sauce over the chicken and turn each piece so it is coated.
Cooking
  1. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken reaches 165°F and pulls apart easily.
  2. Remove the chicken or shred it directly in the crockpot with two forks. Stir the shredded chicken back into the sauce so it soaks up the flavor.
Serving
  1. Serve warm, garnished with sliced green onions if desired.

Notes
