Dressing Ingredients

Method
 

Preparation
  1. Grill or roast the chicken until it reaches an internal temperature of 165°F. Allow it to cool slightly before dicing.
  2. If using fresh corn, grill it until charred and tender, then cut the kernels off the cob, or simply use canned corn.
  3. Dice the cucumber and finely chop the red onion.
Mixing
  1. In a large bowl, combine the chicken, corn, cucumber, and red onion.
  2. In a separate small bowl, mix the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until well combined.
