  • 2 cups frozen strawberries Use unsweetened if possible
  • 1/2 cup pineapple juice For that classic Dole Whip tang
  • 1/2 cup unsweetened coconut milk Keeps it dairy-free; can use any milk of choice
  • 1 tablespoon lemon juice Brightens the fruit flavor
  • 2 tablespoons powdered sugar Add more to taste

Method
 

Preparation
  1. Put the frozen strawberries, pineapple juice, coconut milk, and lemon juice into a blender.
  2. Pulse a few times to break up the largest pieces and avoid overworking the motor.
  3. Blend on medium-high until the mixture is smooth and has the texture of soft-serve.
  4. Taste and add the powdered sugar one tablespoon at a time until you reach the sweetness you prefer.
  5. Serve immediately for a creamy, soft-serve consistency, or transfer to a container and freeze for 30 minutes to firm up.

Notes
