- Pour the rolled oats, almond flour, and vanilla protein powder into a large bowl. Stir until evenly combined.
- Add the softened cream cheese. Use a spatula to break it up and start folding it into the dry mix.
- Sprinkle in the crushed freeze-dried strawberries. Add the honey or maple syrup and the vanilla extract. Fold gently until a coarse dough forms.
- Press the mixture between your fingers. If it falls apart, add 1 tablespoon of milk and mix. Repeat with a second tablespoon only if needed. The dough should hold together but not be sticky.
- Scoop tablespoon-sized portions and roll them between your palms into smooth balls. Place each ball on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes so they firm up. Serve chilled.

Store the balls in an airtight container in the refrigerator for up to one week. For longer storage, freeze them in a single layer on a tray until solid, then transfer to a freezer-safe bag for up to 3 months. Thaw in the fridge overnight before serving. For a firmer finish, roll chilled balls in crushed freeze-dried strawberries or finely chopped nuts.
