  • 4 cups Mixed greens (spring mix, baby spinach, or arugula blend)
  • 4 oz Goat cheese, crumbled
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, sliced
  • 1/4 cup Red onion, thinly sliced
  • 1 medium Avocado, diced Add last to keep it fresh
  • 1/2 cup Toasted walnuts Toast lightly for more flavor
  • 1/4 cup Balsamic vinaigrette Adjust to taste
  • to taste Salt and freshly ground black pepper

Method
 

Preparation
  1. Rinse and spin the mixed greens dry; place them in a large salad bowl.
  2. Add the halved cherry tomatoes, sliced cucumber, and thinly sliced red onion to the bowl.
  3. Dice the avocado and scatter it over the top.
  4. Sprinkle the crumbled goat cheese evenly across the salad.
  5. Scatter the toasted walnuts over everything.
  6. Drizzle with balsamic vinaigrette, then season with salt and pepper to taste.
  7. Toss gently with tongs until ingredients are lightly coated and evenly distributed. Serve immediately.

Notes
