- Combine 1/4 cup lime juice, 3 tablespoons olive oil, 1/2 tsp chili powder, 1/2 tsp onion powder, 1 tsp garlic powder, 1/2 tsp smoked paprika, 1/4 tsp salt, and 1 tablespoon chopped chipotle pepper in adobo in a bowl, then add the diced chicken and marinate for at least 15 minutes.
- Cook the rice according to package instructions and keep it covered to stay warm.
Cooking
- Heat a skillet over medium, add the marinated chicken, and sauté until cooked through and the internal temperature reaches 165°F, about 12 to 15 minutes.
- In the same skillet, add 1 teaspoon olive oil and sauté the chopped red bell pepper and sliced red onion until tender, then add the minced garlic and the cooked chicken back to the skillet to warm through.
