Ingredients
  

Dry Ingredients
  • 2 3/4 cups all-purpose flour Spoon into the measuring cup and level off with a knife to avoid dense cookies.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is softened, not melted.
  • 1 1/2 cups white sugar
  • 1 large egg Can substitute with 1 tablespoon flaxseed meal + 2.5 tablespoons water for a vegan version.
  • 1 teaspoon vanilla extract Can substitute half with maple extract for added flavor.
  • 1/2 teaspoon almond extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the flour, baking soda, and baking powder.
  3. In a large mixing bowl, cream the softened butter and white sugar until smooth and fluffy.
  4. Beat in the egg followed by the vanilla and almond extracts.
  5. Gradually blend the dry ingredients into the wet mixture until fully combined.
  6. Scoop rounded teaspoonfuls of the dough and roll them into balls.
  7. Place the dough balls on ungreased cookie sheets, spaced apart.
  8. Gently press down on each dough ball with the bottom of a glass to flatten slightly.
Baking
  1. Bake for 8 to 10 minutes until the edges are just turning golden brown.
  2. Cool the cookies on wire racks before decorating or serving.
