  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger For a spicier taste, increase the amount.
  • 1 tablespoon ground cinnamon Adjust to taste for more warmth.
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened Ensure it's at room temperature for best results.
  • 1/2 cup granulated sugar Can be substituted with coconut sugar.
  • 1 cup brown sugar, packed For richer flavor, can swap for granulated.
  • 1 large egg
  • 1/2 cup unsulfured molasses Can be substituted with maple syrup.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a medium bowl. Set aside.
  3. Cream the softened butter with the granulated and brown sugars until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop tablespoon-sized balls of dough onto the lined baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are firm but centers remain soft.
  8. Cool on the baking sheet for a few minutes before transferring to wire racks.
