Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour Spoon and level for accuracy; for a chewier cookie, replace 1/4 cup with bread flour.
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 1 cup unsalted butter, softened About 2 sticks; room temperature, not melted.
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar Light or dark brown works.
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
Chocolate
  • 2 cups semi-sweet chocolate chips Can be swapped for chopped chocolate for bigger melty pockets.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment or leave them ungreased.
  2. In a small bowl, whisk together the flour and baking soda, then set aside.
  3. In a large bowl, cream the softened butter, granulated sugar, brown sugar, and salt until smooth and fluffy, about 2 to 3 minutes with a mixer.
  4. Beat in the vanilla extract and then the eggs, one at a time, mixing until fully combined.
  5. Gradually add the flour mixture to the wet ingredients. Mix just until you no longer see streaks of flour to avoid overworking the dough.
  6. Gently fold in the chocolate chips until evenly distributed.
Baking
  1. Drop rounded tablespoons of dough onto the baking sheets, leaving a couple of inches between each to allow for spreading.
  2. Bake for 9 to 11 minutes or until the edges are golden brown and the centers still look slightly soft.
  3. Let the cookies cool on the baking sheets for a few minutes to set, then transfer them to wire racks to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before scooping. Warm cookies in a 300°F oven for 3 to 5 minutes or microwave for 10 to 15 seconds for just-baked softness.
