- Divide the ground beef into four even handfuls. Season each portion with salt, pepper, and garlic powder.
- Place one tortilla on the hot skillet. Press one seasoned beef portion onto one half of the tortilla, spreading it into a thin smashed patty.
Cooking
- Cook the beef side down for 2 to 3 minutes without moving it until browned.
- Flip the tortilla so the meat side faces up. Scatter the cheese over the cooked beef.
- Fold the tortilla in half over the cheese and press lightly with the spatula to seal.
- Grill for 1 to 2 minutes per side until the tortilla is crispy and the cheese is fully melted.
Serving
- Transfer the quesadilla to a cutting board. Let it rest for 1 minute, then slice into wedges.
- Serve with sliced pickles, diced onions, and burger sauce on the side.
