Ingredients
  

For the Tacos
  • 1 lb ground beef (80/20 blend) The fat helps form that crust.
  • 8 small tortillas Flour or corn; flour is softer, corn is firmer.
  • 1 cup lettuce, shredded Iceberg or romaine for crunch.
  • 1 unit tomato, diced Roma or vine-ripe.
  • 1 cup cheddar cheese, shredded Sharp cheddar adds punch.
  • 1/2 cup pickles, sliced Dill or bread-and-butter based on preference.
  • 1/4 cup mayonnaise or your favorite sauce Mix with a little hot sauce or mustard for a tangy kick.

Method
 

Preparation
  1. Heat a heavy griddle or a large cast-iron skillet over medium-high until it starts to smoke slightly.
  2. Divide the ground beef into eight equal balls. Season them lightly with salt and pepper.
Cooking
  1. Place one beef ball on the hot griddle. Press down firmly with a spatula to form a thin patty. Hold pressure for a few seconds.
  2. Leave the patty alone for 2 to 3 minutes. The edges should brown and crisp. Flip once and cook 2 to 3 more minutes until cooked through.
  3. While patties finish, warm tortillas on the griddle about 30 seconds per side until pliable and slightly charred.
Assembly
  1. Place a patty on each tortilla. Top with shredded lettuce, diced tomato, a sprinkle of cheddar, sliced pickles, and a drizzle of mayonnaise or your chosen sauce.
  2. Serve immediately so the patty stays crispy against the tortilla softness.
