Preparation
- Heat a heavy griddle or a large cast-iron skillet over medium-high until it starts to smoke slightly.
- Divide the ground beef into eight equal balls. Season lightly with salt and pepper.
Cooking
- Place one beef ball on the hot griddle. Press down firmly with a spatula to form a thin patty. Hold pressure for a few seconds.
- Leave the patty alone for 2 to 3 minutes until the edges are browned and crisp. Flip once and cook for 2 to 3 more minutes until cooked through.
- While patties finish, warm tortillas on the griddle for about 30 seconds per side until pliable and slightly charred.
Assembly
- Place a patty on each tortilla. Top with shredded lettuce, diced tomato, a sprinkle of cheddar, sliced pickles, and a drizzle of mayonnaise or your chosen sauce.
- Serve immediately so the patty stays crispy against the tortilla softness.
