  • 1 teaspoon dried thyme Can swap for rosemary or oregano.
  • 1 cup beef broth Ensure it's gluten-free if needed.

Method
 

Preparation
  1. Layer the beef pieces and halved baby potatoes in your slow cooker.
  2. In a saucepan over medium heat, melt the unsalted butter.
  3. Once melted, add minced garlic and sauté until fragrant.
  4. Stir in the salt, black pepper, dried thyme, and beef broth, bringing to a gentle simmer.
  5. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  6. Cover and cook on low for 6-8 hours, or until beef is tender.
  7. Garnish with fresh chopped parsley before serving.
