Ingredients
  

Beef and Broth Ingredients
  • 1.5 lbs beef bites (chuck roast or stew meat) Trimmed and cut into uniform pieces if necessary
  • 1 cup beef broth Low-sodium preferred
  • Salt to taste salt
  • Pepper to taste pepper
Vegetable Ingredients
  • 1 lb baby potatoes, halved Use Yukon gold or red potatoes for creamier texture
  • 1 large onion, finely chopped Yellow or sweet onion works well
Flavoring Ingredients
  • 4 tablespoons garlic butter Room temperature or sliced so it melts evenly
  • Optional Fresh parsley for garnish

Method
 

Preparation
  1. Place the beef bites in the bottom of your slow cooker in an even layer.
  2. Scatter the finely chopped onion over the beef, then add the halved baby potatoes on top.
  3. Dot or place the garlic butter over the potatoes and beef so it melts into the cooking juices.
  4. Pour the beef broth into the cooker and season with salt and pepper. Use about 1/2 to 1 teaspoon salt depending on your broth.
  5. Stir very lightly to distribute the butter, onion, and broth without disturbing the meat layer too much.
Cooking
  1. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is fork-tender and the potatoes are soft.
Serving
  1. Serve immediately, sprinkled with chopped fresh parsley if desired.

Notes

For best results, cut beef and potatoes into similar sizes. Adjust salt after cooking according to broth used. Avoid lifting the lid too often as it can extend cooking time.
