  • 1 pound ground beef (85/15 or leaner) Use lean ground beef to limit excess fat.
  • 1 medium onion, diced
  • 1 can (15 oz) corn, drained Fresh or frozen corn can substitute.
  • 1 can (15 oz) black beans, rinsed and drained Pinto or kidney beans also work.
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon chili powder Adjust to taste.
  • Salt and black pepper to taste
  • 2 cups shredded cheddar cheese Or a mix with Monterey Jack.
  • 1 bag (32 oz) frozen tater tots

Method
 

Preparation
  1. Heat a skillet over medium. Add the ground beef and diced onion.
  2. Cook until the beef is browned and no pink remains. Season with salt and pepper.
  3. Drain any excess fat from the skillet.
  4. Transfer the cooked beef and onion to the slow cooker.
  5. Add the drained corn, rinsed black beans, diced tomatoes with green chilies, and chili powder.
  6. Stir to combine the filling evenly.
  7. Sprinkle the shredded cheddar cheese over the mixture.
  8. Arrange the frozen tater tots in an even layer on top.
Cooking
  1. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  2. When the tater tots are hot and the cheese is melted, serve warm.

Notes
