  • 1 pound Italian sausage Quality Italian sausage for best flavor
  • 4 medium potatoes, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth Use low sodium if preferred
  • 1 cup heavy cream Can substitute with coconut milk for dairy-free option
  • 2 tablespoons olive oil
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon pepper Adjust to taste
  • 1 teaspoon thyme Fresh or dried

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery; sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Remove the casing from the sausage and add it to the pot, cooking until browned.
Cooking
  1. Add diced potatoes, chicken broth, thyme, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Stir in heavy cream and heat through.
  4. Serve warm.
