  • 8 slices slices of bread (white or whole wheat) Day-old or slightly stale bread works best.
  • 8 links breakfast sausage links Cook according to package instructions.
  • 4 large eggs
  • 1/2 cup milk Can use non-dairy milk if needed.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter For cooking.
  • to taste Maple syrup For serving.
  • to taste Powdered sugar Optional dusting.

Method
 

Preparation
  1. Cook the sausage links according to package directions until browned and cooked through. Let them rest on a plate.
  2. Remove crusts from each bread slice and flatten each slice with a rolling pin into a thin rectangle.
  3. In a shallow bowl, whisk together the eggs, milk, vanilla, and cinnamon until smooth.
  4. Place a sausage at one end of a flattened bread slice. Roll the bread tightly around the sausage, securing with a toothpick if needed. Repeat for all slices.
Cooking
  1. Heat a skillet over medium heat and add the butter.
  2. Dip each roll-up in the egg mixture, ensuring all sides are coated, and then transfer them to the skillet.
  3. Cook the roll-ups, turning occasionally, until each side is golden brown and the coating is set, about 3 to 4 minutes total.
  4. Transfer to a plate and remove toothpicks before serving warm with maple syrup and a dusting of powdered sugar.
