Preparation
- Preheat the oven to 400°F (200°C) and position a rack in the middle of the oven.
- Remove any tough or damaged outer leaves from the cabbage and discard.
- Slice the cabbage into 1-inch thick rounds.
- Arrange the cabbage steaks in a single layer on a rimmed baking sheet, using parchment paper for easier cleanup.
- Drizzle olive oil over both sides of each steak and rub it around to coat evenly.
- Season with salt, pepper, and optional seasonings like garlic powder or paprika, be generous at the edges.
Cooking
- Roast for 12–15 minutes until the bottom edges begin to brown.
- Flip each steak carefully and roast for another 12–15 minutes until the new edges are crispy and the centers are tender.
- If using Parmesan, sprinkle it on now and return to the oven for 3–5 minutes to melt.
- Remove from the oven and serve hot.
