Muffin Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon salt
  • 0.5 cups canned pumpkin
  • 0.25 cups milk
  • 0.25 cups vegetable oil
  • 1 large egg
  • 0.5 teaspoon vanilla extract
Glaze Ingredients
  • 0.5 cups cream cheese
  • 0.5 cups powdered sugar
  • 2 tablespoons milk for glaze

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, mix the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin, milk, oil, egg, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the muffin cups about 2/3 full.
Baking
  1. Bake for 18-20 minutes, or until a toothpick comes out clean.
Glazing
  1. For the glaze, beat the cream cheese until smooth.
  2. Mix in powdered sugar and milk until desired consistency is reached.
  3. Drizzle the glaze over warm muffins and enjoy!

Notes
