Preparation
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat 1 tablespoon of avocado oil in a large non-stick skillet over medium-high heat.
- Add onion, bell pepper, breakfast sausage, and minced garlic to the skillet. Cook for 7-10 minutes until the sausage is fully cooked. Drain excess liquid.
- In a separate bowl, whisk together eggs, seasoning, salt, and pepper.
- Mix in cottage cheese until thoroughly combined.
- In another bowl, combine all-purpose flour, almond flour, and baking powder.
- Lightly fold the dry mixture into the wet egg mixture until just combined.
- Add cooked sausage-veggie mixture and mix gently until evenly distributed.
- Scoop onto the baking sheet using an ice cream scoop or 1/4 cup measure.
- Top each biscuit with shredded cheese.
Baking
- Bake for 20-21 minutes until golden brown and cooked through.
- Cool slightly on the baking sheet before serving warm.
