Preparation
- Heat a skillet over medium heat until hot but not smoking.
- Spread 1 tablespoon of pesto on the interior side of each bread slice, keeping it thin.
- Place one slice of bread in the skillet, pesto side down.
- Layer both cheese slices evenly on top of the bread in the pan.
- Cap with the second slice of bread, pesto side up.
- Spread 1 tablespoon of softened butter on the top slice.
Cooking
- Cook undisturbed for 3–4 minutes, until deep golden-brown.
- Flip carefully and spread the remaining tablespoon of butter on the new top side immediately.
- Cook another 2–4 minutes until that side is golden and the cheese is thoroughly melted.
- Transfer to a cutting board, slice in half, and serve warm.
