- Scoop the peanut butter and honey into a large mixing bowl. Stir with a spatula until the mixture is smooth and evenly combined.
- Add the rolled oats, chocolate chips or raisins, flaxseed if using, and vanilla extract. Stir until everything is incorporated and the mixture holds together when pressed.
- Cover the bowl and refrigerate for about 30 minutes so the mixture firms up. Chilling makes rolling much easier.
- Use a small cookie scoop or tablespoon to portion the mixture. Roll each portion between your palms into a tight ball.
- Transfer the energy balls to an airtight container and refrigerate.

Store the balls in an airtight container in the refrigerator for up to two weeks. Freeze for longer storage; they keep well in the freezer for up to three months.
