Ingredients
  

Cookie Base
  • ½ cup granulated sugar (plus extra for rolling) Use extra for rolling the dough balls.
  • ½ cup packed light brown sugar
  • ½ cup unsalted butter (softened) Use room-temperature butter for best results.
  • ½ cup creamy peanut butter Can substitute with crunchy peanut butter.
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¼ tsp salt
Topping
  • 24 pieces milk chocolate Hershey’s Kisses (unwrapped)
Optional Creative Twists
  • mini chocolate chips Add to the dough for extra chocolatey flavor.
  • ½ cup oat flour Substitute half the all-purpose flour for a chewier cookie.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, brown sugar, and peanut butter until light and fluffy.
  3. Add the egg and vanilla extract, and mix until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually stir the dry ingredients into the creamy mixture until well mixed.
  6. Scoop small portions of dough and roll into 1-inch balls. Roll each ball in granulated sugar before placing them 2 inches apart on baking sheets.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
  2. Remove from the oven and immediately press a Hershey’s Kiss into the center of each cookie.
  3. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a lower-sugar option, use a sugar substitute for granulated sugar. Store in an airtight container at room temperature for up to a week.
