Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream together the peanut butter, granulated sugar, brown sugar, and softened butter until smooth.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring just until combined—don’t overmix!
- Roll the dough into 1-inch balls and coat them in granulated sugar.
- Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
