Wet Ingredients
  • 1 cup peanut butter creamy or crunchy, your preference
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 30 pieces chocolate kisses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the peanut butter, granulated sugar, brown sugar, and softened butter until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring just until combined—don’t overmix!
  6. Roll the dough into 1-inch balls and coat them in granulated sugar.
  7. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
  3. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To enhance flavor, consider lightly browning the butter before mixing. For variations, add a dash of cinnamon, use caramel or Nutella instead of chocolate kisses, or replace kisses with Reese's Pieces.
