Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the spicy sausage over medium heat until browned.
- In a large bowl, whisk together eggs and milk.
- Add cooked sausage, hashbrowns, cheese, chopped bell peppers, and onions to the egg mixture. Season with salt and pepper.
- Layer tortillas on the bottom of a baking dish.
- Pour the egg mixture over the tortillas.
- Cover the dish with foil and refrigerate overnight.
Baking
- In the morning, bake uncovered for 45-60 minutes or until set and golden.
- Let it cool for a few minutes before slicing and serving.
