  • 2 cups hashbrown potatoes Frozen hashbrowns are a convenient option.
  • 2 cups cheese Use your favorite cheese for topping.
  • 6 large eggs Fresh eggs work best.
  • 8 small tortillas Flour or corn tortillas can be used.
  • 1 cup milk Can use dairy or non-dairy milk.
  • 1 bell peppers Chop into small pieces.
  • 1 onion Chop finely.
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the spicy sausage over medium heat until browned.
  3. In a large bowl, whisk together eggs and milk.
  4. Add cooked sausage, hashbrowns, cheese, chopped bell peppers, and onions to the egg mixture. Season with salt and pepper.
  5. Layer tortillas on the bottom of a baking dish.
  6. Pour the egg mixture over the tortillas.
  7. Cover the dish with foil and refrigerate overnight.
Baking
  1. In the morning, bake uncovered for 45-60 minutes or until set and golden.
  2. Let it cool for a few minutes before slicing and serving.
