  • 4 portions Salmon fillets (about 6 oz each) Skin-on or skinless both work.
  • 2-3 tablespoons Garlic butter (softened) Substitute with plain butter plus 1 clove minced garlic if needed.
  • 1-2 tablespoons Brown sugar (light or dark) For lower sugar use 1 teaspoon honey or maple syrup.
  • to taste Spices: paprika, salt, black pepper Optional: lemon zest or a pinch of cayenne.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Let the oven come to temperature before the fish goes in.
  2. Lightly oil a baking dish or line it with parchment for easy cleanup.
  3. In a small bowl, mash the garlic butter and brown sugar together until smooth and slightly glossy. Taste and adjust—add a pinch of salt if your butter is unsalted.
  4. Pat the salmon fillets dry with paper towels.
Cooking
  1. Brush the garlic-butter mixture generously over the top of each fillet.
  2. Sprinkle paprika, salt, and pepper (and any other spices you like) over the coated fillets.
  3. Place the dish in the preheated oven and bake for 15–20 minutes until the salmon flakes easily with a fork.
Serving
  1. Serve immediately while warm and glossy.

Notes
