Ingredients

For the chicken
  • 4 pieces chicken thighs (bone-in, skin-on recommended) Bone-in thighs yield the best flavor and texture.
  • 2 tablespoons olive oil Can swap for avocado oil for a higher smoke point.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika Can substitute with smoked paprika for a smoky flavor.
  • Salt and pepper to taste

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispier skin.
  3. In a bowl, whisk together the olive oil, garlic powder, onion powder, paprika, salt, and pepper until combined.
  4. Rub the mixture evenly over each thigh, coating the skin and sides.
  5. Arrange the thighs skin side up in a single layer in a baking dish.
Cooking
  1. Bake for 35–40 minutes, or until a meat thermometer reads 165°F (74°C) in the thickest part.
  2. Remove from the oven and let rest for 5 minutes before serving.

Notes

For best results, let chicken sit at room temperature for 15–20 minutes before baking. For extra-crisp skin, broil for 1–2 minutes at the end.
