Ingredients
  

Salmon and Glaze
  • 4 pieces salmon fillets (about 6 ounces each) skin on or off as you prefer
  • 1/2 cup orange juice freshly squeezed for best flavor
  • 2 tablespoons soy sauce low-sodium if preferred
  • 1 tablespoon honey maple syrup works in a pinch
  • 1 tablespoon olive oil any neutral oil can substitute

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and position a rack in the center.
  2. In a medium bowl, whisk together the orange juice, soy sauce, honey, and olive oil until the honey dissolves.
  3. Pat the salmon fillets dry with paper towels and place them skin-side down (if using skin) in a shallow baking dish.
  4. Spoon out about 1–2 tablespoons of the glaze and set it aside for serving.
  5. Pour the remaining glaze evenly over the fillets, using a spoon to turn them so they are well coated.
Cooking
  1. Bake for 12 to 15 minutes, depending on thickness, until the flesh flakes easily and an instant-read thermometer reads 145°F in the thickest part.
  2. Remove the dish from the oven and let the salmon rest for 2 minutes.
  3. Spoon the reserved glaze over each fillet and serve with rice or roasted vegetables.

Notes

If you like more brightness, add a teaspoon of grated orange zest to the glaze. For a gluten-free version, use tamari instead of soy sauce. Serve the salmon over jasmine rice or mashed potatoes for best flavors.
