  • 1 cup milk Can use almond or oat milk as alternatives.
  • 1 large egg
  • 2 tablespoons melted butter Plus more for cooking.
  • 1 teaspoon vanilla extract Optional.

Preparation
  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla until you achieve a smooth mixture.
  3. Pour your wet mixture into the dry ingredients. Gently stir until just combined, being careful not to overmix.
Cooking
  1. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
  2. Pour about 1/4 cup of batter for each pancake.
  3. Cook for about 2 minutes, until bubbles form and edges look set. Flip the pancake and cook for an additional 1-2 minutes or until golden brown.
