Ingredients
  

Filling Ingredients
  • 1 pint fresh strawberries, washed and hulled (about 2 cups sliced)
  • 1 cup granulated sugar Adjust if strawberries are less sweet
  • 1 cup water
  • 1 small box flavored gelatin powder (strawberry or clear)
  • 3 tablespoons cornstarch
Crust and Topping
  • 1 9-inch graham cracker pie crust
  • to taste Cool Whip or whipped topping for serving

Method
 

Preparation
  1. In a small bowl, whisk the cornstarch into the cup of water until completely dissolved and no lumps remain.
  2. Pour that mixture into a medium saucepan. Add the sugar and the gelatin powder.
  3. Heat over medium, stirring constantly until it thickens and boils gently for one minute.
  4. Remove the pan from the heat and let the gelatin sauce cool for about 10 minutes.
  5. Chop the strawberries into bite-size pieces and place them in a large mixing bowl.
  6. Pour the cooled gelatin sauce over the strawberries, and gently fold until the berries are evenly coated.
  7. Taste and add a pinch of extra sugar if desired.
Assembly
  1. Spoon the strawberry mixture into the graham cracker crust, spreading evenly.
  2. Refrigerate the pie for about 2 hours or until the filling is set.
Serving
  1. Serve chilled with dollops of Cool Whip on each slice.

Notes
