Preparation
- Measure the quick oats and mini chocolate chips into a medium bowl and stir to combine.
- Add the peanut butter and honey to the bowl. Stir the mixture until it is uniform and sticky.
- Scoop roughly tablespoon-sized portions, press them together with hands, and roll into about 12 small balls.
- If the mixture is too sticky, chill it for 10–15 minutes to firm up before rolling.
- Store the energy bites in an airtight container in a single layer, or separated by parchment.
