  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/2 cup sour cream Can be substituted with Greek yogurt
  • 1/2 cup sugar Can use honey or maple syrup as a substitute
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts Optional; can substitute with chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the mashed bananas, sour cream, melted butter, sugar, brown sugar, eggs, and vanilla extract until smooth and well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually incorporate the dry mixture into the wet mixture, stirring gently until just combined.
  5. If desired, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan, smoothing out the top.
Baking
  1. Place in the oven and bake for about 60-70 minutes.
  2. To test for doneness, insert a toothpick into the center; if it comes out clean, your banana bread is ready!
  3. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
