Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas, mashed Ensure they are very ripe for best flavor.
  • 1/2 cup sour cream Greek yogurt can be used as a substitute.
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1/2 cup sugar Reduce for a less sweet loaf.
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Whole wheat flour can be used for a healthier option.
  • 1/2 cup chopped walnuts Optional, can be omitted for nut-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the mashed bananas and sour cream.
  3. Stir in the sugar and brown sugar along with the melted butter.
  4. Add the beaten egg and vanilla extract, blending until well mixed.
  5. Sprinkle the baking soda and salt over the mixture, and stir until combined.
  6. Gradually add the flour, mixing gently until just combined. If you're using walnuts, fold them in now.
  7. Pour the batter into the greased loaf pan and smooth the top.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
