Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut into circles to fit into a muffin pan.
  3. In a bowl, mix the diced apples, sugar, and cinnamon.
Baking
  1. Fill each pastry cup with the apple mixture.
  2. Bake for 15-20 minutes or until the pastry is golden brown.
  3. Remove from the oven, let cool slightly, and serve warm with a scoop of vanilla ice cream.
