  • 3 cups cooked shredded chicken Use rotisserie chicken for quicker prep.
  • 1 cup sour cream Greek yogurt can be used for a tangy twist.
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese Can replace with pepper jack for a spicy kick.
  • 1 cup frozen mixed vegetables (peas, carrots, corn) Feel free to use whatever veggies you have on hand.
Topping
  • 1 cup crushed Ritz crackers (or breadcrumbs) Tortilla chips can be used for a different crunch.
  • 1/2 cup butter, melted
Seasoning
  • Salt and pepper, to taste
Optional Garnish
  • green onions or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, shredded cheese, and frozen vegetables. Mix everything until well incorporated.
  3. Season the mixture with salt and pepper to taste.
  4. Pour the chicken mixture into a greased 9x13-inch baking dish and spread it evenly.
  5. In a separate bowl, mix the crushed Ritz crackers with the melted butter until the crumbs are well-coated.
  6. Sprinkle the cracker mixture evenly over the chicken filling.
Cooking
  1. Bake for 30-45 minutes, or until the top is golden brown and bubbly.
  2. Let it cool slightly before serving, then garnish with chopped green onions or parsley if desired.
