Main Ingredients
  • 2 pieces flour tortillas Can substitute with whole wheat or gluten-free tortillas.
  • 1 cup shredded cheese (cheddar or mozzarella) Use freshly shredded cheese for better melting.
  • 1/2 cup cooked chicken Optional, can leave out for a vegetarian option.
  • 1/4 cup sliced olives
  • 1/4 cup diced tomatoes
  • 1/4 cup spinach or arugula
  • 1 tablespoon olive oil Used for cooking the quesadilla.
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
  3. Add the cooked chicken, sliced olives, diced tomatoes, and spinach on top.
  4. Top with the remaining cheese and place the second tortilla over it.
Cooking
  1. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  2. Carefully flip the quesadilla and cook for another 3-4 minutes.
  3. Slice into wedges to serve.
