- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
- Add the cooked chicken, sliced olives, diced tomatoes, and spinach on top.
- Top with the remaining cheese and place the second tortilla over it.
Cooking
- Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
- Carefully flip the quesadilla and cook for another 3-4 minutes.
- Slice into wedges to serve.
