  • 2 medium zucchini, sliced Fresh preferred

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Sauté the minced garlic, chopped onion, and red bell pepper until softened.
  4. Add the zucchini slices and cook for another 5 minutes.
  5. Season the mixture with oregano, basil, salt, and pepper.
  6. Place the chicken breasts in a baking dish and surround them with the vegetable mixture.
  7. Top with crumbled feta cheese and halved cherry tomatoes.
  8. Bake for 25-30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F.
