  • 1.25 pounds boneless skinless chicken breasts, cut into 1-inch chunks
  • 3 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 whole lemon, juice of
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken chunks and zucchini rounds.
  3. Add the olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper. Toss until everything is evenly coated.
  4. Spread the mixture in a single layer in a 9x13-inch baking dish.
  5. Evenly sprinkle the shredded mozzarella over the top, then dust with grated Parmesan.
Baking
  1. Bake uncovered for 25 to 30 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is golden and bubbly.
  2. Remove from the oven, let rest for 3 to 5 minutes, then garnish with chopped parsley and serve.

Notes
