  • 4 pieces boneless, skinless chicken breasts If breasts are large, halve horizontally for even cooking.
  • 1 cup mayonnaise or plain Greek yogurt Use yogurt for tang and fewer calories.
  • 1/2 cup grated Parmesan cheese Freshly grated gives the best texture.
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika or Italian seasoning Optional for extra color and flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Place each chicken breast between two sheets of plastic wrap. Pound gently with a meat mallet or rolling pin until the thickness is about 3/4 inch.
Mixing
  1. In a medium bowl, whisk together the mayonnaise or yogurt, Parmesan, garlic powder, onion powder, salt, and black pepper until smooth.
Baking
  1. Spread the mixture evenly over the top of each chicken breast.
  2. Arrange the coated breasts in the prepared dish and sprinkle with optional paprika or Italian seasoning.
  3. Bake uncovered for 35 to 45 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the topping is lightly golden.
  4. Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.
