- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a large pot over medium heat, heat olive oil and sauté the chicken until golden brown (5-7 minutes). Remove and set aside.
- In the same pot, add garlic and sun-dried tomatoes; sauté for 2 minutes until fragrant.
- Pour in chicken broth and heavy cream; bring to a simmer.
- Return the chicken to the pot.
- Add gnocchi and spinach; cook until gnocchi floats (about 5 minutes).
- Stir in Italian seasoning and serve hot with crusty bread.
