  • 2 cups cooked chicken, shredded You can use leftover rotisserie chicken.
  • 1 cup long-grain white rice Can substitute with brown rice for a healthier option.
  • 1 can cream of mushroom soup For creaminess and flavor.
  • 1 cup chicken broth Homemade broth is recommended for best flavor.
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or pepper jack.
  • 1/2 cup milk For moisture.
  • 1 cup frozen mixed vegetables Optional, can add broccoli or bell peppers.
  • 1/2 teaspoon garlic powder For flavor.
  • to taste Salt and pepper For seasoning.
  • 1/2 teaspoon onion powder For added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, rice, cream of mushroom soup, chicken broth, cheddar cheese, milk, mixed vegetables (if using), garlic powder, onion powder, salt, and pepper.
  3. Stir until well combined.
  4. Pour the mixture into a greased 9x13 inch baking dish.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  7. Let it cool slightly before serving.
Serving
  1. Serve hot from the oven, possibly with a side salad or warm bread.
  2. Add a sprinkle of fresh herbs like parsley for extra flavor.
